Training system: pergola.
Harvest: september.
Vinification: rapid pressing of the grapes and start of alcoholic fermentation at a controlled temperature. Fast fermentation closure and immediate reinoculation for the second fermentation.
Aging: at least 2 months in watertight stainless steel tanks. After isobaric bottling, the wine is put on sale almost immediately with a minimum dosage of sugar (DRY).
Bottling: with isobaric machine and capping with 100% cork microgranule technical cap. Cages Icas.
Alcohol: 12%Vol
Total acidity: 6/6,5g/L
pH: 3.2/3,3
Shelf life: 1 year.

Characteristics for tasting

Color: very pale straw yellow with greenish reflections.

Nose: acitrus, pear, passion fruit. Light balsamic.

Taste: soft, round, not sweet. Mineral, definitely fresh. Intense, creamy mousse.

Pairings: ideal for aperitifs and appetizers. Very good with desserts.
